Office Eats: Easy Egg-Filled Avocados

I know 99.9 percent of you are bound to be with me on this: sometimes I just don’t have the time or patience to cook. It’s times like these when the 20-something in me comes out and I am tempted to dig that block of Ramen out of the cabinet (how long has that been in there again?) But there are other times when I don’t have any patience but I’m craving something that tastes gourmet.

Next time this mood strikes you – instead of running out to pick up expensive takeout try making this simple yet gourmet tasting recipe that works perfectly as a quick breakfast or brunch (or any meal, for that matter). With a friend and client in the office, Nelia Alamo of Gills Onions, I decided to try out this recipe on her and the rest of the gang. Check out this week’s Office Eats featuring the ideal combination of tastes and textures using only an avocado, egg and some cheese!

Office Eats Easy Egg Filled Avocado IngredientsThe Ingredients:

  • 1 California Avocado, sliced in half with the core removed
  • 2 eggs
  • Shredded cheese of your choice – I went with Monterrey jack

The Equipment:

The Process & Prep Time:

  • Slice your avocado in half and remove the core.
  • Crack each egg into the indenture where the avocado pit used to be.
  • Sprinkle a little cheese on top to your liking.
  • Place each avocado half in the oven and bake at 350 for about 10 to 15 minutes, or until your eggs reached your desired consistency.
  • Add a little salt and pepper to taste, and voila!

What an easy, stress free meal. The best part is you can customize it and add more toppings, like salsa, sour cream or even bacon! Mmmm… imagine that smell wafting through your office kitchen. Needless to say, people will be jealous!
