Office Eats: “Better than Cake” Fruit Salad

Better than cake fruit salad!

Well, we’re nearing the end of January and the DMA team members’ resolutions are still (mostly) intact. To both celebrate and support that, as well as to complement our current color story, we decided that fruit salad was the way to go for this round of Office Eats. Not to mention we’re craving, I mean REALLY craving, desserts. And this combination of fresh fruits did not disappoint with flavors as rich and decadent as any lousy ol’ cake or pastry.

Better Than Cake Fruit Salad ingredients!

Fresh and In-season Ingredients:

  • 2 cups diced pineapple
  • 1 ½ cups pitted Bing cherries
  • 2 honey tangerines, de-seeded (don’t let their easily scarred exteriors fool you, these things are divine)
  • 2 Bosc pears
  • ½ cup pecan piecesRoast Pecans for Enhanced Flavor!

That’s it! No dressing, no sweetener, no guilt. And the antioxidants, vitamins and fiber in this salad are off the charts and will contribute to maximum resolution success.

This recipe fed six of us with enough left over for tomorrow’s snack.
