
With the holidays around the corner, we couldn’t resist the opportunity to celebrate with a Thanksgiving-themed Office Eats. Pies seem to be the dessert of choice around most of our holiday tables and they pack the one-two punch of house-filling aroma and tummy-satisfying taste. Since there’s not much better than a warm pecan pie, we thought ‘why not whip one up and pass it around the office table’? Here is Marci’s mom’s pecan pie recipe that turned out fabulously in our office Breville oven.
Pecan Pie
3 eggs
2/3 cup sugar
Dash salt
1 cup dark corn syrup
1/3 cup melted butter
1 ½ cup coarsely chopped pecans
1-9 inch unbaked pie shell
Beat eggs, sugar, salt, syrup, and butter until well blended. Stir in pecans. Pour into pie shell and bake at 350 degrees for 50 minutes or until knife inserted in the middle of the pie comes out clean.
Note: If you are inclined to make your own pie crust, by all means, roll away! However, we used a frozen Pillsbury pie crust for ours and it was flaky and oh-so-easy.
